Meat-Lover's Slow Cooker Spaghetti Sauce


  This creates a great, chunky, and very meaty spaghetti sauce. The longer it cooks, the better it tastes.

  1. Heat olive oil in a skillet over medium heat; cook and stir onions and Italian sausage until the sausage is browned, about 10 minutes. Transfer the sausage and onions to a slow cooker. In the same skillet, cook and stir the ground beef, Italian seasoning, 1 teaspoon of garlic powder, and marjoram, breaking the meat up as it cooks, until the meat is browned, about 10 minutes. Transfer the ground beef into the slow cooker.
  2. Stir in the tomato sauce, tomato paste, diced tomatoes, stewed tomatoes, thyme, basil, oregano, and 2 teaspoons of garlic powder. Set the cooker on Low, and cook the sauce for 8 hours. About 15 minutes before serving, stir in the sugar. Serve hot.

This recipe was given to me as part of a wedding gift recipe collection from a very dear friend. It is rich, aromatic, flavorful and makes A LOT. So please grab the biggest pot you can find. I mean REALLY BIG. Extra sauce freezes well for future pasta dishes.

  1. Heat butter and olive oil together with onion and garlic in a large pot over medium heat; cook and stir ground beef and sausage in the onion mixture until browned and crumbly, 10 to 15 minutes. Stir Italian seasoning, salt, rosemary, oregano, and black pepper into ground beef-sausage mixture; simmer for 20 minutes.
  2. Pour water, tomato puree, and tomato paste into ground beef-sausage mixture; simmer, stirring occasionally, over low heat until flavors have combined, at least 2 hours.

Curried Coconut Chicken




 Curried chicken simmered in coconut milk and tomatoes makes for a mouthwatering hint of the tropics! Goes great with rice and vegetables.

  1. Season chicken pieces with salt and pepper.
  2. Heat oil and curry powder in a large skillet over medium-high heat for two minutes. Stir in onions and garlic, and cook 1 minute more. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
  3. Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.

  1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
  2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Boiled White Coconut Rice

Boiled White Coconut Rice takes the basic Boiled White Rice to another level of taste. This recipe is special because it tastes great on its own without the need for a stew or sauce.
But you can serve it with the following stews and sauces: Coconut Curry Sauce, Mixed Vegetables Curry Sauce or N

Ingredients

  • 2 cups (400g) long grain parboiled white rice
  • 1 coconut
  • ½ cup shrimps
  • ¼ cup green peas
  • Salt (to your taste)

Notes about the ingredients

  1. You can use another type of rice to prepare this but the process of precooking the rice detailed on this page may not apply to other types of rice.
  2. Use very mature, sweet coconut.
  3. You can add more shrimps and green peas if you wish.
  4. You can use tinned coconut milk to prepare this rice but I do not recommend it because tinned coconut milk is tasteless. For a rich taste, use tasty Homemade Coconut Milk.

Cooking Directions

  1. Use the coconut to make some fresh Coconut Milk. Click here for details.
  2. Set some water in a pot to boil. We will use it to preecook the rice.
  3. When it boils, add the rice and cook on medium heat for about 10 minutes.
  4. Pour it out in a sieve to drain then quickly cool it down with water.
  5. Pour the coconut milk in a clean pot and set it on the stove to boil.
  6. When it boils, add the precooked rice stir and make sure the coconut milk is at the same level as the rice. If not top it up with water. See the video below.
  7. Add salt and the shrimps.
  8. Cover the pot and start cooking on medium heat.
  9. When the liquid is almost dry, add the green peas and continue cooking.
  10. When all the liquid dries up, the rice should be down. That is if you precooked the rice correctly.

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Pat chicken dry. Combine 1 tablespoon black pepper, garlic powder, paprika, cumin, and 1 teaspoon salt in a bowl. Rub the mixture on the chicken.
  3. Heat a cast iron skillet over high heat. Add peanut oil to the hot skillet and watch it carefully; when oil smokes, add chicken, skin-side down. Cook until browned, about 4 minutes each side. Transfer chicken to a plate; reserve drippings in the skillet.
  4. Melt butter in a small saucepan. Add honey, sriracha sauce, soy sauce, and lime juice. Add remaining black pepper and salt. Bring sauce to a boil; reduce heat and simmer until thickened, about 5 minutes.
  5. Return skillet with drippings to medium-high heat. Add potatoes, carrots, onion, turnip, and garlic. Cook and stir until browned, 5 to 7 minutes. Remove from heat. Add chicken on top of the vegetables, skin-side up. Coat with about a third of the sauce.
  6. Bake in the preheated oven for 10 minutes. Add wine to the skillet and coat chicken with another third of the sauce. Cook until an instant-read thermometer inserted into the meat near the bone reads 165 degrees F (74 degrees C) and vegetables are tender, about 20 minutes. Coat chicken with remaining sauce before serving.
